La Mare Sparkling Wines
 

Our flagship wines!

Since the first release of Cuvee de La Mare for the Millenium celebrations, it was clear that Jersey was suitably placed to produce some very fine sparkling wines. To follow the sucess of Cuvee de La Mare, a Rosé sparkling was released, named after "the Jersey Lily" - Lillie Langtry. Both wines are now produced annually and are in such demand, that vintages regularly sell out before the next one is ready!

The winemaking follows the traditional Champagne method, with carefully selected whole bunches, pressed gently to extract the best quality juice. The primary fermentation is temperature controlled to keep all the aromas in the wine, and transforms the delicate juice into a wonderful dry crisp base wine. Bottling with "Tirage liqueur" (see right) to start the secondary fermentation, and subsequent ageing on yeast lees in bottle for a minimum of 12 months ensures a good fizz. Riddling (remuage see right) and disgorgement are undertaken with dosage liqueur if necessary to adjust the final sweetness to give a well balanced flavour and good mouthfeel.

 

Cuvee de La Mare

Cuvee was the first Jersey sparkling wine, and really proved that we can make quality sparkling on Jersey.

The wine is made with Seyval Blanc grapes, chosen for their neutral, Chardonnay like characteristics. This gives an excellent base similar in style to a Blanc de Blanc Champagne. With extended lees ageing in bottle the characteristic biscuit / toasted bread aromas develop to give a really classic taste.

The resultant wine is Brut, with a light floral quality, creamy fruit with a hint of biscuity yeast, beautifully clean, elegant palate and a wonderful, mouth filling fizz! The finish is long and dry.

Use as you would a quality Champagne. Perfect for celebrating; as an aperitif; to accompany delicate fish dishes; use for a sparkling wine sorbet, or for a refreshing change, try after the dessert course to really surprise the palate!

Lillie

After the sucess of Cuvee de La Mare, a sparkling Rosé was an obvious progression. Made using the classic Champagne variety of Pinot Noir, carefully crushed and held on the skins to extract the right amount of colour before gentle pressing. Proving to be even more popular than the Cuvee de La Mare, this is especially ideal for wedding celebration, valentines day, in fact, pretty much any romantic situation!

Lillie has fantastic aromas from the Pinot Noir with cherries, elderberry and raspberry on the nose and a full fruity palate with a hint of sloes. The mousse is fine and mouth filling, with a long pleasing finish.

Use for celebrations; as an aperitif; with Italian dishes; or to accompany strawberries and cream!

"Tirage Liqueur"
or bottling liqueur is a mixture of sugar, wine and yeast that causes a secondary fermentation to occur in bottle giving the wine an exciting fizz!


Pupitre or Riddling Rack
"Riddling"
or remuage is the process of twisting and shaking of the bottles in a pupitre (above) over a period of days to move the yeast lees into the neck of the inverted botle, ready for disgoregement, when the yeast pops out and the final cork inserted.
